chickpea salad


lovely salad for school lunch boxes or just for a casual lunch.


2 tins of chickpeas

a handful of cherry tomatoes (chopped)

around 10 olives

a handful of spinach

half a cucumber

1 bell pepper

a sprinkle of oregano

olive oil

a dash of basil

a sprinkle of time


*Cut the cucumber and pepper into thin slices then cut the tomatoes into quarters.
* Mix them together with the olives, spinach, chickpeas and olive oil.
* In a separate bowl mix the time, oregano and basil together, then add and mix in to the main mixture.

Enjoy fresh or put in the fridge for another day!
